Ingredients

Wheat Flour - 2 Cups
Ajwain - 1/2 Tsp
Potato - 3 Nos
Carrot - 1 No.
Green Peas
Water
Salt
Ginger Garlic Paste - 1/2 Tsp
Green Chilli - 1 No Chopped
Turmeric Powder - 1/2 Tsp
Chilli Powder - 1 Tsp
Garam Masala - 1 Tsp
Cumin Powder - 1 Tsp
Chopped Coriander Leaves
Sev
Paneer
Chaat Masala
Butter

Method

For the Dough:

1. Take wheat flour, salt and ajwain in a large bowl. Mix it all well.
2. Gradually add water and prepare the dough. Knead it for 10 mins.
3. Cover the bowl with a lid and let the dough rest for 30 mins.

For the Filling:

1. Peel off the potato and carrot skins. Chop them into even size pieces and put them in a pressure cooker.
2. To it add fresh green peas, water and salt.
3. Cover the cooker with a lid and cook the vegetables on medium low flame for about 3 whistles.
4. Transfer the cooked veggies to a large bowl and add ginger garlic paste, green chillies, turmeric powder, red chilli powder, garam masala powder, cumin powder and coriander leaves.
5. Mix all the vegetables and spice powders together. Mash them well and keep the mixture aside.

For the Parathas:

1. Divide the rested dough into equal sized portions and keep aside.
2. Dust the rolling surface, put a dough ball on it and start rolling it thickly.
3. Place the potato filling in the middle and put some sev over it.
4. Grate some paneer over the sev and add some chaat masala powder.
5. Seal the paratha by taking all edges to the middle. Gently press the paratha inside and sprinkle some flour on it.
7. Gently start rolling the paratha again.
8. Once it is in the desired thickness, put it on a heated tawa and cook it on both sides.
9. Add butter once the brown spots appear on the paratha. Flip to the other side and add butter again.
10. Once it is cooked on both sides, add a dollop of butter and chopped coriander leaves on the top.
11. Yummy and delicious Street Style Shahi Veg Parathas are ready to be served hot.
12. You can serve this paratha with some raitha or pickle by the side or you can have it as it is with some plain curd.
