Pork Pata Kare Kare is a classic Filipino stew where sliced pork pata pieces are cooked in a nutty yellow thick peanut sauce made with peanuts, onion, garlic, pechay, string beans, eggplant, ground rice, annatto seeds and, cooking oil. This dish much affordable and delicious and large chunks of pata are served with green string beans and purple eggplants to complete the dish. Pata Kare Kare is best eaten with steamed white rice with sauteed bagoong alamang on the side.

Ingredients:

1 kilo sliced pork pata
1 minced onion
2 cloves minced garlic
1 cup peanut
Bunch of pechay
1 sliced eggplant
1 sliced banana blossoms
1L water
Ground rice
Annatto seeds
Oil
Pepper Powder
Shrimp Paste
Water

Procedure:

1. In a pot, put sliced pork pata. Boil for 1 hour or until tender. When tender, removed from the pan and set aside.
2. In a pan, lightly toast peanut. When sligthly toasted, transfer to a food processor. Process until grounded. Add a bit of oil then process again. Process until peanut butter-like. Set aside.
3. In a pot, saute onion and garlic. Add boiled pork pata. Add peanut butter and water.
4. Add vegetables, starting with banana blossoms and sitaw.
5. Put annatto seeds on a strainer, dip a few times into the pot until you achieved the desired color. Continue cooking until vegetables tender and sauce thicken.
6. Add remaining vegetables and ground rice to thicken further the sauce.
7. Turn off fire.
8. Transfer to a serving dish, serve with shrimp paste.
