Last night, July 19th, marked the start of Eid al-Adha or Feast of Sacrifice for the year 2021. It’s a very important occasion for Muslims around the world. Depending on the country, it can last between two and four days. Muslims traditionally celebrate Eid al-Adha by offering special prayers and slaughtering a goat, sheep, cow or camel. The obtained meat is then divided into thirds to be shared with the family, friends, and people in need.

I’m not a Muslim, but I was born in Saudi Arabia and lived there around 8 years. To honor Eid al-Adha, I’ve decided to cook a dish from my birthplace called beef kabsa.

Ingredients:

Kabsa:
-beef
-basmati rice
-kabsa sauce/tomato puree
-cooking oil
-onion
-garlic
-black pepper
-cumin
-turmeric
-salt
-little sugar (optional)
-coriander
-cinnamon
-cardamom
-cloves
-bouillon
-dried lemon (optional)
-cashew (toppings)
