In January of 2020, my sister Alex asked to move with me and Nicole to help out at the micro bakery. I asked her what she wanted to help with and she said just whatever work in the micro bakery is.

A month into assisting me, she decided to make croissants. First thing I asked her was 'WHY?' lol

So what we did is we read and looked up recipes/processes and eventually settled with Tartine's croissant recipe with some slight changes in hydration and percentages.

2 months ago, we decided to film what she does in the micro bakery and this video is the product of that.

Alex is the pastry person of our little micro bakery. Cheers :)
