For our last recipe of the year we made lamingtons. In some of our research we found that the original lamington recipe is said to have originated either in Australia or New Zealand - however it is also a firm South African favourite!
I share my recipe which you can also adjust to make sweeter or more cocoa rich as you prefer.

Ingredients
For the sponge cake
2 cups of flour, sieved
2 tsp baking powder
125g margarine
1/2 cup castor sugar
1 tsp vanilla essence
A pinch of salt
1 cup milk
3 large eggs

For the Chocolate syrup
2 cups water
1 cup milk
6 tbs cocoa powder (add more for deeper coca flavour)
1/2 cup icing sugar - adjust to your taste
1 tbs margarine

Coconut dust to coat.

Serve with a lovely cup of tea or coffee. If you allow to sit overnight the syrup will soak into the sponge cake and make the lamingtons even more decadent!
