MASOOR PULAO AND SURKI. In this video we will go through step by step instructions on how to make Bohra Style Masoor Pulao and Surki.

Masoor Pulao is a very authentic vegetarian Bohra dish which is mostly served with Surki (Soup make of the masoor stock).

First step is to boil the masoor daal in water and salt. Once the daal is cooked well, drain it and keep the stock for Surki. Surki is very simple to make. Boil it for a few minutes with onion, tomatoes, green chillies and spring onion for that the flavours are infused. Let it cool, once it's cooled add the yogurt and mix well. Add salt to taste. Your delicious surki is ready.

Now we make the pulao. We make layers of rice and daal like biryani. Make the daal mixture by cooking it with sauteed onion, tomatoes and all the spices mentioned in the video until well done. Keep aside. Cook the white rice with water, oil, salt and the garam masala mentioned. Once both the items are cooked, we layer them by placing half you cooked rice in a pot, then add the daal mixture and then top it with the final layer of the rice. Now garnish with fried onions, food color and ghee. Let it simmer on low heat (dum) for some time so that all the flavours of the rice and daal get infused together. Your delicious Massor Pulao and Surki is ready!

• 1 cup brown Lentils

MASOOR CURRY
• 1 cup boil brown Lentils
• 2 onion
• 1 large tomato
• 2 1/2 tbsp. green chili paste
• 1 tsp ginger paste
• 1 1/2 tsp garlic paste
• 2 tsp red chilli powder
• Salt
• Oil

RICE
• 350 gram rice
• 1/4 tsp black zeera
• 1 black cardamom
• 6 black pepper
• 1 bay leave
• 1 cardamom stick
• Yellow food colour
• Salt
• Oil
• Water
