How to make Bánh bột lọc (Tapioca Dumplings):
Ingredients needed:
1 Bag of Tapioca (16oz)
1 piece of pork side
1 1/3 cup of hot water
Fish Sauce
Powdered garlic/onion
Rolling Pin/Cutting board
Direction:
1-Cut the pork side into small pieces and marinate it with a bit of fish sauce, garlic powder and dice onion. Marinate for at least an hour
2-Put the cut meat into a pan and cook for about 15 minute. You can add a bit of turmeric or yellow food coloring to make bring out the nice color. Set aside to cool down
3-In a mixing bowl, open the tapioca flour and pour it in the mixing bowl. Boil 1 1/3 cup of water and pour it in the tapioca flour. Take a fork or chopstick and mix the flour with the hot water. In about 15 minute of blending it together, it will be come a round ball. Take a bag and put the mixing bowl in and cover it for 30 minute.
4-You will need a small rolling pin and cutting board to roll the dough at this time.
5-Roll the dough to about 2 inches wide and take the precook meat and put it in the middle of the dough. Then fold the dough in half. It should look like a moon shape.
6-Once you are done wrapping the dumplings, boil a pot of water and put the dumplings in with 1 table spoon of oil(this is make the dumpling not stick together). Depending on how much dumpling you will be making, fill the pot up accordingly with water and bring to a boil before adding the dumplings.
7-Boil for 10-12 minutes and take it out of the pot. Your dumplings are done. Just chop some green onions and sprinkle on top and serve with either some fish sauce or soy sauce.
