Hi, everyone! Today we're going to show you how to make a delicious and soft bread from Austria : Vienna Bread (Pain Viennoise).

Vienna bread is a type of bread made through a procedure which originated in Vienna. It's normally made in the shape of a baguette but with many cuts on its surface, but the crust is softer and the taste is sweeter than a baguette. Our family loves this bread. It's an ideal bread for all kinds of  sandwiches, salty or sweet. It’s definitely one must not miss to try. 😊

Vienna Bread Recipes

☞ Yields: 5, each dough weight 90-91g

✎ Ingredients
35°c warm milk 165g
instant yeast 7g
granulated sugar 25g
bread flour 125g
all purpose flour 125g
salt 5g
unsalted butter 30g, softened
beaten egg 1 (for egg wash)

✎ Instructions
1. Combine the warm milk , yeast and sugar and mix well. Rest for 10 minutes.
2. Sieve bread flour and all-purpose flour, then add in the salt and mix well.
3. Add wet ingredients in with dry ingredients, and mix until just combined then transfer the dough onto the work surface, knead for 1 or 2 minutes.
4. Add the softened butter and knead until the dough is completely smooth, it might take 8 to 10 minutes. Basically, this dough won't be sticky.
5. Place the dough ball in a bowl and cover with the plastic wrap, let rise for 1 hour or until it becomes triple size.
6.  Divide the dough into 5 pieces and shape them into balls, each weights 90-92g, but you can make them bigger or smaller as you like.
7. Cover with a damp towel and let rest for 15 minutes.
8. Flatten each dough ball to remove air bubbles  and shape them into 18cm in length, place the dough rolls in a baking tray and keep a distance between the dough.
9. Brush it with egg wash. Using a sharp knife or razor blade score on top. Let it proof again for 1 hour.
10. Preheat the oven to 200°C, bake for 18-20 minutes, or until golden brown.  Once baked, let them cool slightly on a wire rack. Enjoy with the warm bread.
