Janhi Rai || Turai ki Sabji || Tori Recipe || Ridge Gourd Curry

Ingredients:
Potato, oil, Ridge Gaurd (Janhi/Tori) , garlic, red chilli, cumin seeds, salt, coconut, Dry Mango (amchur), water, turmeric powder, chilli powder

Process:
Step 1: Chop Janhi and potato in medium size. Wash the vegetables cleanly.
Step 2: Make a thick masala paste of: mustard seeds, garlic, cumin seeds, coconut by grinding
Step 3: Heat oil in a pan. Put red chilli fry it for 1 min then add masala paste. Mix it properly then add salt, turmeric powder, chilli powder. Stir it. Fry the masala paste for sometime then add chopped vegetables. Add some water as per your gravy requirements.
Let the vegetables Boil for sometime.
Step 4: Then add dry mango and let it boil for more 7-10 mins.

Finally, Janhi Rai is ready to eat.
