2 tbsp olive oil1 onion, chopped 2 garlic cloves, minced1 large carrot , chopped 2 celery ribs , chopped 2 cups / 400g dried lentils , green or brown, rinsed400g / 14 oz crushed tomato1.5 litres / 1.5 quarts or 6 cups vegetable or chicken stock / broth, low sodium1/2 tsp each cumin and coriander powder1 1/2 tsp paprika powder2 dried bay leaves1 lemon - zest + juice 1/4 tsp salt and pepper, each
Cilantro/parsley for the top
Parmesan cheese for the top
Optional side of sourdough or naan bread!
