📝 Ingredients:
• 1 kg (2.2 lbs) chicken thigh bone-in
• 1 tsp salt and pepper
• 2 Tbsp olive oil
• 1 cup red curry paste
• 1 tsp grated fresh ginger
• 1 tsp grated garlic
• 1 1/2 cups (350 ml) tomato passata
• 1 can (400 ml) coconut cream
• 1 red bell pepper, thinly sliced
• Fresh coriander/cilantro for garnish

🍽️ Instructions:

1. Prepare the Chicken:
Season the chicken with 1/2 tsp salt and pepper. Heat 2 Tbsp of olive oil in a large skillet over medium-high heat. Sear the chicken on both sides until golden brown, about 3-4 minutes per side. Remove the chicken from the skillet and set aside.

2. Cook the Aromatics:
In the same skillet, add the red curry paste, grated fresh ginger, and grated garlic. Sauté for about 1 minute, or until fragrant.

3. Make the Curry Sauce:
Add the tomato passata and coconut cream to the skillet. Stir to combine and bring to a simmer.

4. Combine Chicken and Vegetables:
Return the seared chicken to the skillet, nestling it into the sauce. Add the thinly sliced red bell pepper on top.

5. Bake the Curry:
Preheat your oven to 375°F (190°C). Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is cooked through and the sauce is bubbling.

6. Garnish and Serve:
Remove the skillet from the oven. Garnish with fresh coriander/cilantro. Serve the Thai Red Chicken Curry hot, with rice or your favorite side.

Tips:
• For extra flavor, add a splash of fish sauce or a squeeze of lime juice before serving.
