Cheesy Sweet Corn Bread
Makes 2 small or 1 large loaf. Delicious thickly spread with cold butter

Ingredients

• 500g self-raising flour
• 1 x 410g evaporated milk
1 x 410g water
2 eggs
• 5 tablespoons chopped parsley
• 1 x 410g tin drained corn kernels.
100g grated mozzarella cheese


• 5ml salt
• 2.5ml black pepper
• 4 cloves grated garlic
• 3/4 teaspoon paprika
• 100g grated mozzarella

Method
1. Preheat the oven to 180 deg C

2. Grease and line a loaf tin with parchment paper.

3. Mix all the ingredients together and spoon into the prepared loaf tin.

4. Bake for approximately 40 minutes or until a skewer inserted into the centre of the loaf comes out clean.

5. Cool and serve with butter.
