Somlaw Machu Kroeung is one of My Favorite Soups. It’s Sour, Salty, Savory, Pungent Umami from the Prahok Fermented Mud Fish Paste.

Pair up with some Fluffy Jasmine Rice it become so well Balanced in Flavors 😮‍💨🍚🙌🏻🙏🏻.

This Cold 🥶 Weather has me Craving for this and Yao Han 😋🍚🙏🏻🙏🏻.

Kroeung | Lemongrass Paste

20 Garlic Cloves
1 Piece of Peeled Turmeric (2-3 ounces)
5-7 Stalk of Lemongrass (use lower end of stalk)
2-3 Thinly Sliced Galangal
20-30 Pieces of Kaffir (makrut) Lime Leaves.

Prep:

Desired Amount of Jalapeños, Asian Egg Plant, and Water Spinach (morning glory).

You can also use Celery.

Recipe:

1 Lbs of Sliced Beef

1 1/2 to 2 Cups of Kroeung Lemongrass Paste.
3 Tbsp of Vegetable Oil
2 Tbsp of Prahok Fermented Mudfish Paste.
3 Tbsp of Fish Sauce
4 Tbsp of Chicken Bouillon
1/4 Cup of Sugar or Palm Sugar
4 Tbsp of Tamarind Powder or Concentrate
4 Cups of Water

5-10 Pieces of Curry Leaves 🍃 and Holy Basil 🌿 if you have it!

Adjust to taste! 🙌🏻
