Travel buddy cook up number 17, Pork Ribs & Vegies. It was time to get a couple of bush jobs done that had been sitting in the queue for a while and I was looking forward to a drive to just enjoy getting out the bush again and I definitely got that. My first job was in Ivanhoe NSW which is a 4 hour drive by road, I decided to take the back roads as some of the main roads were closed due to the recent rains, the amount of water in the bush at the moment is so god. Bird life and the land in general just looking amazing. After finishing the job (actually became 2 while I was there I picked up another job) and having my lunch in Ivanhoe it was time to find my way to Cobar, my old home town. I love getting back there and catching up with old friends, this was a flying visit so I only caught up with 2 old mates, but it was awesome to see them again. After getting the job done it was time to get down to some cooking and driving. I was hoping to make it home, but after 1000kms, 3 jobs and 18 hours on the road, I decided it would be best to pop the roof top up after dinner and get some sleep before finishing the trip home in the morning.

The food turned out spot on, the camping was not bad, pretty windy for the first half of the night, but the temperature was sweet for camping and I got a few extra jobs while I was out there, not a bad day out the bush actually.

*Remember its not perfect, compared to the way you cook at home in your own oven, but it's all happening while your driving and saving you time when you arrive at your destination or for your lunch stop on the road. Keep trying different foods and times and see what works for you and your family.

Pre heat oven for 30mins if you want to, Prep time 5 -10mins total, cooking time approx 2-3 Hrs depending on when you want to eat and how long you want to cook for. I find the slower and longer the better.
Ingredients -
Pork Ribs (back) - use any rub that you like.
Seasoning - Her & garlic salt, paprika, butter, chicken stock, chilli flakes, salt and pepper. Feel free to add your favourite spices
Seasonal vegetables, what ever you have in the fridge or cupboard
