Goan Chana Ros is a vegetarian dish from Goan cuisine made with dried white peas (Safed vatana) It is popular in Goa as a breakfast meal. Mildly spiced and flavorsome, the white pea is enjoyed with Goan pav or puris. People also like to have curry in combination with potato Suki bhaji.

It can also be used as a curry at lunchtime. Serve the Goan Chana Ros recipe with steamed rice, and Kelyachyo Fodi (banana) to have a nice Goan vegetarian meal. You can also serve chana Ros with bread and rotis, but we prefer to have it as a side dish with rice.

INGREDIENTS:
White pea (chana) – 2 cups
Salt as per taste
Jaggery – 1 small piece
Fresh coriander leaves

For Tadka:
Oil – 2tsp
Hing – ½ tsp.
Mustard seeds – 1tsp.
Curry leaves
Onion (roughly chopped) – 1 medium size
Tomato (roughly chopped) – 1 medium size


For Coconut Masala paste:
Freshly grated coconut – 1 small size
Onion – 1 medium size
Tomato – ½ piece
Green chilli – 1
Fresh coriander leaves
Curry leaves
Oil – 2tsp.
Garlic cloves – 4 to 5
Ginger – ½ inch
Turmeric powder – 1 tsp.
Garam masala powder – 2tsp.
Water – ½ cup
Pressure cooked chana – 2tsp.

METHOD/PREPARATION:
STEP 1:
Clean and rinse the chana. Soak chana in water overnight. Pressure cook chana for 3-4 whistles or until it becomes soft.

Step 2:
Coconut masala paste
Heat 2 tsp oil in a pan, add garlic, ginger, and green chili saute till its aroma is realized. Now add onion and saute till it's translucent on low flame. Add tomato saute for some time, now add freshly grated coconut and continue to saute till aroma is realized. add curry leaves and fresh coriander and saute for some time. Put off the gas and allow it to cool.
Transfer in a mixer jar add pressure-cooked chana, turmeric powder, garam masala powder, and water. Grind to a semi-fine paste. (Add water if required while grinding)

Step 3:
Heat 2 tsp oil in a kadai, add Hing, mustard seeds (once mustard seeds pop up) curry leaves, and onion (saute till it's translucent) then add tomato (saute till it softens). Add pressure-cooked chana, and stir for some time (on medium flame). Add ground coconut masala paste, add water, and adjust its consistency. Mix it well, cover, and cook for 15 minutes on medium to high flame. Add salt and jaggery, stir, and cook for 2 minutes. Garnish with fresh coriander leaves.

Enjoy chana Ross with hot steamed Rice, puris, or bread, with onion and lemon sliced.
