There are many different tutorials out there that explain how to sharpening a knife, however not many of them have explained the concept of thinning properly. Yet this is a super important element of proper knife sharpening, and arguably more important that simply getting the knife sharp (which you can easily to it with any sharpener).

A customer recently gave me a badly shaprened knife, it is so bad to the point that it would not cut strahight and would split a potato instead of slicing thorugh. I gave the knife a quick sharpening session and still was able to slice a tomato (the slice in thumbnail). Yet to return the knife to its former glory, I had to spend a significantly more amount to time.

In this tutorial, I explained why thinning is super imporant and what you should do to keep your knife performing well.
