Spiral Mooncake / Swirl Mooncake

Ingredients:

A. Water dough
150g All-purpose flour
56g Unsalted butter
60ml Water
15g Icing sugar

B. Oil dough
115g Low protein flour
70g Unsalted butter
12g Purple sweet potato powder

C. Filling:
450g Durian mung bean paste
16 nos Salted egg yolk

Steps:
A. Water dough
1) Add in all-purpose flour, unsalted butter, water and icing sugar, mix well and knead until form a rough film stage.
2) Cover and let it rest for an hour.

B. Oil dough
1) Add in low protein flour, unsalted butter and purple sweet potato powder, mix well until a form a dough
2) Cover and let it rest for an hour.

C. Shaping the dough
1) Divide both water dough and oil dough into 8 portions, shape into small balls and rest for 20 minutes.
2) Flatten water dough and wrap it around oil dough, shape into a small ball.
3) Roll each dough ball into long oval shape, then roll up to form a tight cylinder. Rest for 20 minutes.
4) Turn the rolled dough 90 degrees and roll it out again into long oval shape, then roll it up again to form a tight cylinder.
5) Cut the dough into 2, flatten into a round disc with palm. Wrap the dough around the filling and seal the bottom. (Make sure the spiral pattern on the center of outside)
6) Bake in a preheat oven at 160c for 30 minutes.

Filling:
1) Arrange the salted egg yolk on a baking tray lined with parchment paper and spray with some white spirit.
2) Bake in a preheat oven at 160c for 10 to 15 minutes (without fan)
3) Flatten the filling and wrap with salted egg yolk and shape it into a smooth ball.

千层酥月饼 / 螺旋千层酥

材料:
A. 油皮
150克 中筋面粉
56克 无盐牛油
60毫升 水
15克 糖粉

B.. 油酥
115 克 低筋面粉
70克 无盐牛油
12克 紫薯粉

C. 馅料
450克 馅料
16颗 咸蛋黄

做法:
A. 油皮
1)加入中筋面粉,无盐牛油,水及糖粉, 揉成面团成粗膜。
2)盖好休息1小时。

B. 油酥
1)加入低筋面粉,无盐牛油及紫薯粉, 揉成团。
2)盖好休息1小时。

C. 面团
1)  将油皮及油酥各自分成8份, 搓成小圆球。休息20分钟。
2)把油皮裹包着油酥,揉成球状。
3)把每个团擀成长椭圆形,再卷成圆柱形。休息20分钟。
4)把面团转90度,再次擀成长椭圆形,再卷成圆柱形。
5)把面团切成2份,用手掌压扁成圆形面皮,包入馅料,收口封紧朝下。(螺旋图案向外正中心)
6) 放入预热烤箱160度 30分钟。

馅料:
1)把咸蛋黄放在已铺好烘焙纸的烤盘上,喷上白酒。
2)放入预热烤箱160度10至15分钟。(不用开风扇)
3)轻压馅料,包入咸蛋黄,搓成小圆球。
