碱水糕是福建人的传统糕点,除了蘸糖浆,也可配卤猪脚。为了更加的弹牙,切时不粘刀,古老的做法,会放一点硼砂,但为了健康的着想,我没放。为了添加香气,我加入班兰叶汁,希望大家喜欢。

材料:
8寸模具
200g粘米粉
10g木薯粉
750ml清水
24g班兰叶
2茶匙碱水
半茶匙盐
黑糖浆:
200g黑糖
80g椰糖
1大匙白糖
60ml清水
140ml浓椰浆
5片班兰叶
注:1) 若喜欢原味,可以不用放班兰叶汁。
2)若要更弹牙,可以放3g的硼砂。
Ingredients:
8-inch mold
200g rice flour
10g tapioca flour
750ml water
24g pandan leaves
2 tsp alkaline water
1/2 tsp salt
Dark brown sugar syrup:
200g dark brown sugar
80g palm sugar
1 tbsp white sugar
60ml water
140ml coconut milk
5 pandan leaves
Note:
1) If you like the original flavor, you can avoid pandan leaf juice.
2) If you want more elastic, you can put 3g of borax.
