I show you the process of making this delicious Asian dipping sauce, and specifically demonstrate how to do water bath canning in the Nesco canner. While the canner I use in this video is the Nesco 9-quart smart pressure canner, the same method works in the Carey smart canner. Recipe:
1/2 cup finely chopped garlic
1 tablespoon salt
6 cups cider vinegar
6 cups granulated sugar
1/2 cup hot pepper flakes

Bring the vinegar to a boil. Add sugar and stir until dissolved. Reduce heat and boil for 5 minutes. Remove from heat. Add garlic, salt, and hot pepper flakes.

Ladle into jars, half inch headspace. Process in a water bath canner for 15 minutes, adjusting the time for altitude (I processed for 20 minutes, due to my altitude.)
