Join the pasta club 🍝 and make it yourself
If you're ever wanted to make homemade penne or rigatoni, this is the closest you're going to get without a machine! Garganelli is the most similar hand shaped pasta to Penne, which is typically made using an extruder/machine, similar to Rigatoni.
All you need is a rolling pin & a cutter for this pasta! You can find the link to the pasta cutter I used in this video, but you can totally use a pizza cutter or even just a knife!
In this video, I’ll show you how to knead your egg dough, roll it out and shape fresh hand shaped garganelli and rigatoni pasta, with just a rolling pin, with step by step instructions!
Recipe for 2 servings:
2 whole large eggs
1 cup of flour (I use a mix of half and half semola rimacinata and 00 flour)
If you do not have semolina, you can absolutely use all 00 or All Purpose, but just know that your pasta may collapse! The inclusion of the semolina adds more structure to your pasta so it has a better chance of holding it's shape.
*Add more flour as needed, depending on your environment
I live in a very dry environment so I didn't need any extra moisture, but if you live somewhere with moisture in the air, you will most likely need to add a sprinkle of flour as you knead!
For the squares, you can really make these as big or small as you want, the smaller the squares the better chance that your pasta will hold it's shape. I made large ones to better show the rolling process. I usually cut my squares in 2-in x 2-in (5-cm x 5-in) squares :)

Common Questions & Things to remember when making fresh pasta…
How long does it take to cook fresh pasta?
Pasta is ready to cook immediately in salted boiling water for 3-5 minutes depending on the thickness & type of pasta. For shaped & filled pasta, I usually cook for 4-5 minutes, but it's all dependent on how thin or thick you rolled your sheet! Test a piece after 3 minutes and continue testing until pasta is cooked to your personal preference.
What is the best way to store Fresh Pasta for optimal freshness? Do you need to thaw frozen pasta?
Pasta can also be frozen for weeks, best within 1-2 weeks for ultimate freshness. Do Not Thaw, stick directly into boiling salted water, cook time is the same as fresh, maybe a tad longer.
How much time do I need to set aside to make fresh pasta?
Knead Time: 5-7 mins
Rest Time: 30 mins, covered at room temperature
Rolling Out & Shaping By Hand: 30+ mins
I’d say you should set 2 hours aside for making fresh homemade pasta by hand
Is fresh pasta really that much better?
Yes, yes it absolutely is better.
