CHEWY Fresh Homemade Egg Noodles Without Machine | Aunty Mary Cooks. Noodles are very popular among Asians. It is used a lot in Chinese cooking. There are many different types of noodles. Egg noodles is one of them. It is simple and easy to make at home even without the noodle machine. Just use a sharp knife to cut. This egg noodle is chewy and is very good in soup as it doesn’t get too soft easily. It can be used as in fried noodles too. Aunty Mary shows how to make this easy recipe of chewy fresh egg noodles at home without machine.Ingredients

2C flour, packed down
4 medium eggs, lightly beaten
1/2 tsp salt
1/2 tsp baking soda
Tapioca flour for dusting
1-2 Tbsp oil to add to cooked noodles to prevent sticking together

Note:
1. The amount of fresh noodles made is about 900g.
2. Baking soda gives the noodles a chewy texture and a nice taste. You can use less if you prefer it less chewy.
