4 tbsp unsalted butter
1 tbsp finely chopped onion
2 garlic cloves, finely minced
1 cup whole milk
1 cup flour
1/4 tsp nutmeg
Salt and pepper to taste
1 tbsp dry cooking wine
1 lb uncured ham
2 large eggs, room temperature
1 cup seasoned breadcrumbs
1 tbsp parsley
Lime wedges for serving

Grind 1 lb of ham of your choice. Melt butter in a saucepan on medium heat. Sauté onions until translucent. Slowly add 1/3 cup flour while mixing. Cook for a minute or 2. Slowly add milk while whisking you have a smooth paste. Add seasonings, cooking wine & ham. Mix until combined. Pour everything in a bowl, cover with plastic wrap & let it rest in the fridge overnight or at least 3 hours. Oil your hands, grab a tosp of the mixture & form into a small log. Freeze until firm. Dip your logs into 1/2 cup flour first then egg and finally breadcrumb. Freeze until firm again. Deep fry until golden brown.
