How to Make Lower Calorie Olive Garden Zuppa Toscana Soup for Weight Loss

Hey guys! I am so excited to release my official first episode of Lower Calorie Kitchen! In this episode, we are making a lower calorie version of a copycat Olive Garden Zuppa Toscana Soup. It is so good, you won’t even notice that it's lower in calories.

In shooting this video, we had some hiccups along the way (audio issues), but I am really proud of this video and what we are starting here on this channel.

We are figuring things out as we go, but I know each video we put out will be better than the last. We hope you like this video, and stay tuned for our next episode!

My Lower Calorie Zuppa Toscana
6 (1-1/3 cup) servings

Ingredients for the spicy Italian sausage:
· 1 pound ground turkey 93%
· 1/8 tsp Truvia brown sugar blend
· 1/8 tsp dried thyme
· 1/8 tsp dried oregano
· 1/4 tsp fennel seeds
· 1 tsp garlic powder
· 1 tsp onion powder
· 1 tsp crushed red pepper flakes
· 1 tsp dried basil leaves
· 1 tsp salt
· 1 tsp ground black pepper
· 2 tsp paprika
· 1 tbsp red wine vinegar
· 1 tbsp dried parsley

Ingredients for the rest of the soup:

· 1/2 cup minced onion
· 1 tsp minced garlic
· 6 cups chicken broth
· 4 large russet potatoes
· 1 cup half & half
· 10 oz bag spinach
· 1/2 tsp salt
· 1/2 tsp ground black pepper
· 1 pound spicy Italian sausage (below)

Prep the night before
· Mix all ingredients listed for spicy Italian sausage in a large mixing bowl, wrap in cling film, and refrigerate overnight.

The next day
· Heat a large Dutch oven over medium high heat. Spray with nonstick spray and add the sausage and brown, crumbling it as it cooks. Remove to a plate.
· Add onion to the pot, and cook until soft, about 5 minutes. Then add garlic, and season with salt and pepper. Add chicken broth and potatoes and cook until potatoes are tender, about 25 minutes.
· Stir in spinach and let cook until leaves are bright green, about 3 minutes, then stir in the half & half and the sausage and simmer for 5 minutes.
· Serve with saltine crackers, parmesan cheese and light sour cream. (not included in the calorie count)
