55g . . . Room temp unsalted butter
32g . . . Powdered sugar
10g . . . Egg yolk
5g . . . . Lemon juice
20g . . . Almond powder
0.5g . . . Salt
1g . . . . Vanilla extract
Zest of 1 lemon
100g . . Cake flour
‣Lemon glaze
60g . . . Powdered sugar
11g . . . Lemon juice
Chopped pistachios

▷Cook Time
Bake it at 300°F/150°C for 18-20 minutes
‣Convection oven at 300°F/150°C
‣Conventional oven at 320-338°F /160-170°C

▷Storage
Glazed lemon cookies store in an airtight container at room temperature for about 3 days. Be sure the glaze has completely dried before storing.
