Ingredients

3 large onions
one large bowl filled with bread crumbs or toasted, dry chunks of Portuguese, French or Italian bread
1 lb linguica (chunks or ground)
1 lb chourcio (chunks or ground)
chicken broth or hot water (to mix for texture with the bread crumbs)
2 sticks butter
1 chopped bell pepper (optional)

Seasonings (season to your taste)

1 TBSP Paprika
2 tsp Poultry Seasoning
2 TBSP Celery (dried flakes)
1 tsp RedHot Dry Seasoning Mix
1 TBSP Bell's Seasoning or Herbs de Provance
Black Pepper
2 tsp Garlic Powder
Course Ground Salt
Frank's RedHot Sauce

Melt 1 stick butter in skillet, then add onions and green pepper (if desired). Cook onions until fairly soft. Add Bell Seasoning or Herbs de Provance. Continue to cook onions down, then add the linguica and chourico. Add more butter as needed to make the mixture wet.

Transfer the wet mix of onions into a large soup pot. Add chicken broth to add more liquid volume, or mix hot water with chicken buillion if you prefer. You will need this liquid to moisten and soften all the bread crumbs. Keep adding more bread and more liquid until you have a slurry like mix. Then add a bit more of the bread crumbs, texture should be wet and sticky, but not soupy. Now add RedHot sauce, paprika, celery flakes, black pepper, salt, garlic to the entire mixture. Season to your taste, if you like it spicy and more savory, add more pepper (hot sauce, or even crushed red peppers are fine.) Add salt. Don't be afraid to taste the stuffing at this stage, and add seasonings as needed, especially salt, since the volume of bread will need more flavoring.

Transfer to oven-safe pan or aluminum pan and bake at 375 degrees uncovered till the stuffing dries a bit and gets toasty on top. Stuffing should be golden in color and browned slightly around the top and edges.
