Sfeeha | Lebanese meat pies
A popular appetizer in the Middle East
Ingredients:
For the dough:
All purpose flour -2 cups (260g)
Sugar-1&1/2 teaspoon
Instant yeast -1&1/2 teaspoon
Salt-1/2 teaspoon
Olive oil -2 tablespoon
Luke warm milk-3/4 -1 cup ( gradually add and mix until you get a dough. The dough should not be very tight.)

Filling:
Minced meat -350g
Salt-1/4 teaspoon ( to taste)
Pepper powder -1/4 teaspoon
Paprika-1&/2 teaspoon
Spice mix-1/4 teaspoon

Method:
1. Mix the flour with salt, sugar, Instant yeast. Gradually add the milk and mix until you get a semi sticky dough. The dough has to be little sticky, so that the pie will be soft. It will be fixed when you knead.
2. Add oil and knead until you get a smooth dough.
3. Grease a bowl and place the dough. Cover and let it rest for 60- 90 minutes/ until the dough has doubled the size.
4. After 90 minutes take the dough and cut into 10-12 small pieces.
5. Shape into balls and let it rest for 10-15 minutes or until the filling is ready.
6. Chop onion, tomato and garlic in a chopper or you can finely chop it it.
7. Squeeze the extra juice, this is to prevent the pies becoming soggy while baking.
8. Mix it with the minced meat along with the spices mentioned.
9. Take out the dough balls and roll out into small circles.
10. Place the 2-3 spoon filling and spread evenly to make a thin layer. Fold as shown in the video.
11. Bake in a preheated oven ( 180C for 10 minutes) at 180C for 25-30 minutes.
