Ingredients
INGREDIENTS FOR GATTE:-
Besan or Gram Flour - 1 cup
Turmeric Powder - 1/4 Teaspoon
Red Chilli powder - 1/4 Teaspoon
Coriander powder - 1 Teaspoon
Crushed saunf/fennel seeds - 1/2 Teaspoon
Ajwain/Carom Seeds - 1/4 Teaspoon
Dry Pudina/Mint leaves - 1/2 Teaspoon
Hing/Asafoetida - a pinch
Oil - 2 Teaspoon
Curd - 2 Teaspoon
Salt - as per taste
INGREDIENTS FOR GRAVY:-
Fresh Curd/ dahi - 1 cup
Oil or Ghee - 1 tablespoon
Chopped Green Chillies - 1
Grated Ginger - 1/2 inch piece
Curry leaves - few
Turmeric powder - 1/4 Teaspoon
Red chilli powder -1/2 teaspoon
Coriander powder - 1 to 1 & 1/2 Teaspoon
Asafoetida/ hing - pinch
Cumin seeds/ jeera - 1/2 teaspoon
Kasuri methi/Dry fenugreek leaves - 1/2 Teaspoon
Chopped Coriander Leaves - For garnishing.
Instructions
1.In a bowl, add and mix besan/gram flour, salt, turmeric powder, red chilli powder, coriander powder, crushed fennel seeds, carom seeds, crush dry mint leaves, asafoetida, and 2 teaspoon oil. Then add 2 teaspoon curd to it. 2.Mix well. Finally, add water to make medium soft dough. Add little oil so that it will not stick to the hands.
3.Meanwhile, boil water in a vessel.
4.Divide the dough into equal-sized balls. Then make long cylindrical shape logs.
5.Once the water boils, add gatte to it.
6.Cook the gatte for 7 to 8 minutes on medium flame or until they are soft and then turn off the flame. You will see the white bubbles on the top of gatte. This is a sign that gatte are perfectly cooked.
7.Take the cooked gatte out from the water and cut the rolls in circular pieces.
PREPARING THE GRAVY:-
1.Add turmeric powder, red chilli powder, and coriander powder to the curd. Whisk it well.
2.Meanwhile, heat oil in a pan.
3.Add asafoetida and cumin seeds. Then add chopped green chilli and grated ginger. Saute it. Then add curry leaves. Saute for a few seconds.
4.Lower the flame and add curd mixture. Mix well. Cook it while stirring continuously until it boils.
5.Stir the curd continuously till it reaches a boil. Add gatte to the boiling gravy and salt. Let it simmer for 2 minutes.
6.Then, add crushed kasuri methi/dry fenugreek leaves. Mix well and turn off the flame. Garnish it with coriander leaves.
7.Delicious 'Gatte Ki Sabzi - Rajasthani Special' is ready to be served.

Tips and Suggestions by Mom Chef:-
For preparing the gatte, knead a medium-soft dough.
Add gatte to the water for cooking only after it boils, else they will stick to each other.
For preparing the gravy, first, lower the flame then add curd mixture to it.
Stir the mixture continuously and cook it until it is boiled, else, it may curdle.
Add salt only after the gravy boils.
