Serves 4

For the miso dressing
3 tbsp water
2 tbsp nut butter
2 tsp miso paste
1 tbsp soy sauce
1 ½ limes, juice only
1 tsp caster sugar

200g courgette noodles
150g red cabbage, finely shredded
½ large cucumber, diced
3 peaches, sliced in thin wedges
12 basil leaves
2 tbsp walnuts, roughly chopped

To prepare the dressing, place the water, nut butter, miso paste, soy sauce, lime juice and sugar into a bowl and whisk well
Season with a little freshly ground black pepper.
Check the seasoning, adding a little extra soy sauce if needed.
To prepare the salad, place the red cabbage, courgette noodles and diced cucumber layered in a serving bowl.
Spoon some dressing over.
Add the peaches on top and sprinkle basil leaves and walnuts over.
Serve extra dressing in a jug.
