Ingredients:
Moong dal papad, 2-3 nos
Mangodi/moong dal wadi, 125 g, coarsely crushed
Curd, 1 cup
Besan/gram flour, 1.5 cup
Hing/asafoetida, 1 tsp
Green chillies, 1 tbsp
Ginger, 1 tbsp
Dry red chillies, 2
Cumin seeds, 2 tsp
Bay leaves, 2
Turmeric powder, 3 tsp
Coriander powder, 4 tsp
Red chilli powder, 2 tsp
Oil, as needed

Method:
Heat oil in a pan, then add cumin seeds, hing, dry red chillies, green chillies, ginger and saute.
Now add the mangodis and saute. Add turmeric powder, salt, coriander powder, red chilli powder and mix well.
Once the spices and mangodis are mixed, add water. Cover and cook until mangodis are soft.
Place the curd, water and besan in a large bowl, and whisk until well combined. There should be no lumps.
In a separate pan, heat oil. Add hing and papad pieces.
Saute, then add salt, turmeric powder, coriander powder and red chilli powder.
Mix well, add water, then cook until the papad pieces are soft.
For the final assembly of the dish, heat oil in a separate pan.
Add cumin seeds, ginger, hing, bay leaves and mix.
Add turmeric powder, coriander powder and red chilli powder.
Mix well, then add the curd mix. Keep stirring until the mix comes to a boil.
Now add the mangodi mix and give it a good stir.
Once the mangodis are mixed well in the gravy, add the softened papad.
Stir lightly, making sure not to break the papad pieces.
Let the sabzi boil for 2-3 minutes, then serve it with a garnish of fresh coriander leaves.
