Pappu Chekkalu, also known as Andhra Pappu Chekkalu or Thattai, is a popular crispy snack from Andhra Pradesh. Here's a simple recipe for you to try:

Ingredients
- 1 cup rice flour
- 1/4 cup chana dal (soaked for 1 hour)
- 2 tablespoons butter (room temperature)
- 1 teaspoon cumin seeds
- 1 teaspoon sesame seeds
- 2 green chilies (finely chopped)
- 1 sprig curry leaves (finely chopped)
- 1 teaspoon red chili powder
- A pinch of asafoetida (hing)
- Salt to taste
- Water (as needed)
- Oil (for deep frying)

Instructions

1. *Prepare Dough:*
1. In a mixing bowl, add rice flour, soaked chana dal, butter, cumin seeds, sesame seeds, green chilies, curry leaves, red chili powder, asafoetida, and salt.
2. Mix all the ingredients well.
3. Gradually add water and knead into a stiff dough. The dough should not be too soft.

2. *Shape Chekkalu:*
1. Take a small lemon-sized ball of dough.
2. Place the ball between two plastic sheets or a greased banana leaf and flatten it with your fingers or a rolling pin to make a thin disc.
3. Repeat the process with the remaining dough.

3. *Deep Fry:*
1. Heat oil in a deep frying pan over medium heat.
2. Once the oil is hot, gently slide the flattened dough discs into the oil.
3. Fry them until they turn golden brown and crispy on both sides.
4. Remove with a slotted spoon and drain on paper towels to remove excess oil.

4. *Serve:*
- Allow the Pappu Chekkalu to cool completely before storing them in an airtight container.
