Best Chocolate Cupcakes Ever!

BEST CHOCOLATE CUPCAKES EVER!
Recipe:

Dry ingredients:
2 C. All purpose flour (I use half whole wheat flour)
2 C. Organic sugar
3/4 C. Cocoa
2 t. Baking soda
2 t. Baking powder
1 t. Salt
1 t. Espresso powder
Wet ingredients:
2 eggs
1/2 C. Avocado oil
1 C. Buttermilk
1 C. Boiling water

Directions:
Preheat your oven to 350 degrees. Whisk dry ingredients together in a large bowl. In a separate Bowl, mix eggs, oil, and buttermilk. Add liquid mixture to dry ingredients and mix together. Add boiling water last and mix until all ingredients are incorporated. Pour or scoop into muffin liners or lined cake pans. For cupcakes, bake 15 minutes or until a toothpick comes out clean. Cakes will probably take a few minutes longer.
