跟大家介绍一個不需要特别多的油脂的流沙黑芝麻餡,加入炒香花生,餡料更香又有口感。

材料: 炒香黑芝麻100g, 炒香花生40g, 砂糖80g, 黃油30g, 豬油35g, 熱水20g (成品約有305g餡)

We normally make tang yuan with black sesame filling, working out this recipe and this came out very good. Give this a try.

流沙黑芝麻餡 💚 Reduced oil LAVA BLACK SESAME FILLING

材料 :
炒香黑芝麻 100g (先去沙洗淨排乾水)
炒香花生 40g
砂糖 100g (甜度按喜好調整)
融化無鹽牛油 66g
熱水34g
蜜糖 8g (1/2 茶匙) 或麥芽糖
[ 做好餡料約有350g,可做兩份湯圓,每份35粒 ]

心得 : 增加些少牛油/豬油或熱水份量可增加餡料流動性。

Ingredients:
Dark Sesame 100g (wash and strain before stir-fry)
Peanut 40g
Caster Sugar 100g (adjust sweetness on personal preference)
Melted unsalted butter 66g
Hot water 34g
Honey 8g (1/2 teaspoon) or maltose
[ above made 350+- filling, good for 2 portions of tang yuan, each portion 35 pieces)

tips: add a bit more butter or lard or hot water adds fluidity to the filling.
