*Bean and Beef Soup Recipe:*

*Ingredients:*
700g cubed stewing beef
1 onion, chopped
1 bay leaf
1 tsp black peppercorns
1 dried chili pepper
Salt to taste
Fresh rosemary sprigs
Water
Olive oil
1 red onion, finely chopped
1 cup tomato sauce
2 tbsp gochujang paste
2 tbsp soy sauce
1 tsp dried oregano
1 tsp dried thyme
1 tbsp garam masala
1 tbsp Texan seasoning spice
1 can butter beans, drained and rinsed
1 can red kidney beans, drained and rinsed
1/4 cup soup of your choice for thickening
Homemade hard crust bread, for serving

*Method:*

1. In a large pot, add cubed stewing beef, onion, bay leaf, black peppercorns, dried chili pepper, salt, and fresh rosemary. Cover with water and bring to a boil.

2. Reduce the heat to medium-low and simmer for 2 hours until the beef is tender. Once done, separate the meat and the stock. Set them both aside.

3. In the same pot, heat olive oil over medium heat. Add chopped red onion and sauté for 2 minutes until softened.

4. Stir in tomato sauce, gochujang paste, and soy sauce. Cook for another 2 minutes.

5. Season with dried oregano, thyme, garam masala, and Texan seasoning spice. Stir to combine.

6. Return the cooked beef to the pot and mix well with the sauce. Cover and cook for 6 minutes until the sauce is sticky and reduced.

7. Add back the reserved beef stock and simmer for 20 to 30 minutes.

8. Add the drained butter beans and red kidney beans to the pot. Stir to combine.

9. Season with salt to taste and add the soup of your choice for thickening. Cook for a further 10 minutes until the beans are heated through and the soup has thickened slightly.

10. Serve hot with homemade hard crust bread.
