🟢材料:
雞翼 500克
薯仔(土豆) 550克
薑、蔥、蒜頭 適量
紹興酒 2湯匙
生抽 1湯匙
鹽 1茶匙
糖 ½茶匙
蠔油、胡椒粉、油 適量

🟢做法:
1️⃣ 將1公斤的雞翼(本菜只用500克)浸泡在淡鹽水中約10分鐘,洗淨吸乾水,下少許胡椒粉、1茶匙鹽、2湯匙紹興酒、1湯匙生抽、糖½茶匙、薑片、蔥段、蒜頭和少許油拌勻,醃製4小時。
2️⃣ 雞翼煎至金黃反轉,加入蒜頭和薑片煎至兩面金黃,盛出備用。
3️⃣ 薯仔切塊,水中放入少許鹽浸泡薯仔5分鐘,瀝乾水分。
4️⃣ 把薯仔煎至微黃(也可炸至微黃),加入適量熱水、少許鹽和蠔油,炆煮7分鐘。
5️⃣ 把雞翼加進去,中小火再炆8分鐘,試一下薯仔是否夠腍,調味汁收上碟。

🟢Ingredients:
Chicken wings - 500g
Potatoes - 550g
Ginger, spring onions, garlic - as needed
Shaoxing wine - 2 tbsp
Light soy sauce - 1 tbsp
Salt - 1 tsp
Sugar - ½ tsp
Oyster sauce - as needed
White pepper powder - as needed
Oil - as needed

🟢Cooking Directions:
1️⃣ Soak 1kg chicken wings (this recipe only uses 500g) in lightly salted water for about 10 minutes. Wash and dry the chicken wings, then mix with a little white pepper powder, 1 tsp salt, 2 tbsp Shaoxing wine, 1 tbsp light soy sauce, ½ tsp sugar, ginger, spring onions, garlic, and a little oil. Marinate for 4 hours.
2️⃣ Pan fry the chicken wings until golden brown, then flip and add garlic and ginger slices. Fry until both sides are golden brown, then remove and set aside.
3️⃣ Cut the potatoes into chunks and soak in water with a little salt for 5 minutes, then drain.
4️⃣ Pan fry the potatoes until slightly golden brown (or deep-fry until slightly golden brown), then add enough hot water, a little salt, and oyster sauce to stew for 7 minutes.
5️⃣ Add the chicken wings and simmer on medium-low heat for another 8 minutes. Check if the potatoes are tender enough, then adjust the seasoning and serve.
