Ingredients

Toppings
1/4 cup all purpose flour
1/4 cup sugar
1/4 cup desiccated coconut
2 tbsp butter

Muffin batter
1 1/2 cups milk
1 1/4 cups sugar
2/3 cups vegetable oil
2 eggs
2 tsp ube liquid flavor
4 cups all purpose flour
1 tbsp baking powder
1 tsp salt
1 cup ube halaya

Bake 350F for 30 mins

Makes 16 muffins
