斑蘭椰汁戚風蛋糕材料:
(8英寸蛋糕)
5隻 大雞蛋 (蛋白約180克)
80克 椰汁
1/8 茶匙鹽
110克 低筋麵粉
30克 斑蘭汁
50克植物油
110克幼砂糖
1茶匙白醋/檸檬汁

通常,100 克蛋白至少需要50 公克細砂糖來幫助打發。所以不建議再減這個食譜內糖的份量,打發蛋白時加入糖可以吸濕並使蛋白泡沫更穩固,讓打好的蛋白霜更有光澤。

9吋: 8吋份量x1.27
7吋: 8吋份量x0.77
6吋: 8吋份量x 0.56

Pandas chiffon cake ingredients:
( 8 inches cake )
5 large eggs (egg white about 180g)
80g coconut milk
1/8 tsp salt
110g low gluten flour (cake flour)
30g Pandan juice
50g vegetable oil
110g caster sugar
1 tsp white vinegar / lemon juice

Generally, 100 grams of egg white requires at least 50 grams of caster sugar to help foaming. Therefore, it is not recommended to further reduce the amount of sugar in this recipe. Adding sugar when whisking the egg whites can absorb moisture and make the egg white foam more stable and make the beaten meringue more shiny.

Conversion of cake mold size and ingredient amount:
10 inches: 8 inches weight x 1.56
9 inches: 8 inches weight x1.2
7 inches: 8 inches weight x 0.77
6 inches: 8 inches weight x 0.56
5 inches: 8 inches weight x 0.39
4 inches: 8 inches weight x 0.25
