材料
鮮蚵 250克、蒜頭 4粒、辣椒 1根、蒜苗 2根、薑15g

調味料
豆豉 1大匙、太白粉 2大匙、香油 1小匙、鹽巴 少許、白胡椒 少許、砂糖 1小匙、醬油 1小匙、水 適量、太白粉水 適量
裝飾物香菜葉 少許

1.蒜苗切成顆粒狀,蒜頭切碎,薑切絲,辣椒切碎,豆豉用水略為清洗
2.水煮開 再加入鮮蚵,立即關火,即可撈起
3.鍋子加入沙拉油,加入蒜苗(白色),蒜頭,薑與辣椒,炒出香味,再加入豆豉
4.加入水、醬油、糖,再加入煮好的鮮蚵與蒜苗(綠色)
5.加入太白粉水勾芡,煮滾即可關火起鍋

Fresh Oysters with Fermented Black Beans

Ingredients
250g fresh oysters, 4 cloves of garlic, 1 chili pepper, 2 garlic chives, 15g ginger

Seasonings
1 tbsp fermented black beans, 2 tbsp cornstarch, 1 tsp sesame oil, a pinch of salt, a pinch of white pepper, 1 tsp sugar, 1 tsp soy sauce, water as needed, cornstarch water as needed
Garnish: coriander leaves

Cut the garlic chives into small pieces, mince the garlic, shred the ginger, and chop the chili pepper. Rinse the fermented black beans with water.
Bring water to a boil, add the fresh oysters, and immediately turn off the heat. Remove the oysters with a slotted spoon.
Heat some vegetable oil in a wok and stir-fry the white part of the garlic chives, garlic, ginger, and chili pepper until fragrant. Add the fermented black beans.
Add water, soy sauce, sugar, and the cooked oysters and green part of the garlic chives.
Thicken the sauce with cornstarch water, bring to a boil, and then turn off the heat. Serve garnished with coriander leaves.
