INGREDIENTS

350G ALL PURPOSE FLOUR
1 WHOLE EGG
135ML WARM MILK
80G SOFT BUTTER OR MARGARINE
30G SUGAR
6G FRESH OR DRY ACTIVE YEAST
4G SALT

FILLING
200ML COLD HEAVY CREAM
3 TBSP ICING SUGAR


COATING

1 EGG
A BIT OF MILK


METHOD

-IN A BIG STAND MIXER BOWL PUT THE FRESH YEAST,SUGAR AND WARM MILK, MIX WELL AND THEN ADD THE FLOUR, EGG, BUTTER AND SALT, MIX FOR 12 MINUTES ON SPEED 2

-MAKE A SMALL BALL WITH THE DOUGH AND PUT IN A GREASED BOWL, COVER WITH CLING WRAP, LET IT DOUBLE IN SIZE FOR 2 HOURS, DEPENDING ON THE WEATHER IT MAY TAKE UP TO 3 HOURS

-ONCE THE DOUGH HAS DOUBLED IN SIZE, PUNCH OUT THE AIR FROM THE DOUGH, PUT ON A LIGHTLY FLOURED SURFACE AND DIVIDE INTO 10 EQUAL PIECES

-COVER THE REST OF THE PIECES AS YOU WORK ON 1 PIECE AT A TIME, ROLL INTO A 10 CM LONG SUB LIKE SHAPE,PUT ON A BAKING TRAY LINED WITH PARCHMENT PAPER, COVER WITH CLING WRAP AND LET THEM DOUBLE IN SIZE FOR 45-60 MINUTES AGAIN THIS MAY TAKE UP TO 90 MINUTES DEPENDING ON THE WEATHER ( IN WINTER THE DOUGH TAKES LONGER TO RISE)

-ONCE THEY HAVE DOUBLED IN SIZE, BEAT 1 EGG WITH A BIT OF MILK, LIGHTLY COAT THE BUNS, BAKE IN A PREHEATED OVEN FOR 20 MINUTES AT 190°C

-ONCE THEY ARE READY PUT THEM ON A COOLING RACK AND LET THEM COOL COMPLETELY

-WITH A HAND MIXER WHIP 20OML COLD HEAVY CREAM FOR 2 MINUTES ON HIGH AND THEN ADD 3 TBSP OF ICING SUGAR CONTINUE MIXING FOR 1 MINUTE

-PUT THE CREAM IN A PIPING BAG, CUT THE BUN LONGITUDINAL PIPE THE CREAM, SPRINKLE ICING SUGAR ONTO THE BUNS
