This is the best recipe for making smooth and silky traditional Tofu pudding at home. Tofu Pudding is a nutritious Chinese dessert, a good source of protein, high in calcium and low in fat.

Ingredients for Tofu pudding:
1000 ml Soy Milk (No sugar)
1 tsp Gypsum Powder (Food Grade)
2 tsp Corn Starch
1 Tbsp Water

Ingredients for Ginger Syrup:
20 g Ginger (peeled and shredded)
80 g Raw Sugar
80 ml Water

Equipment needed:
A deep pot
Paper towel
Thermometer

Method:
1. Use 1 Tbsp water to dissolve gypsum powder (food grade) and corn starch in a small bowl for later use.
2. Heat the unsweetened soy milk at medium heat.
3. Keep stirring during the heat-up process to prevent the soymilk from sticking to the pan or boiling over.
4. Use a thermometer to check the temperature.
5. Turn off the heat when the soy milk reaches ~90 C (you will see some tiny bubbles come up).
6. Then, stir the Gypsum powder solution again and pour it into the deep pot.
7. Quickly pour the hot soy milk from a higher position into the deep pot.
8. Cover it with a paper towel and a lid.
9. Do not stir the soymilk and do not move the pot because this will affect the congratulation process.
10. Wait for about 30 minutes, and it will be ready.
11. During the waiting period, prepare the ginger syrup.
12. Cook the ginger with little raw sugar in a pan.
13. Add water and bring it to boil.
14. Add raw sugar and cook for ~3-5 minutes until slightly thick.
15. Use a strainer to sift out the ginger.
16. After 30 minutes, the tofu pudding should be ready.
17. Scoop away the bubbles on the surface.
18. Traditional Tofu Pudding taste better to eat fresh.
19. Serve Tofu Pudding with ginger syrup as desired.

If you want to cut down your sugar intake, you can use sugar substitute (i.e., Monk fruit sweetener, Stevia) to make the ginger syrup.
