Ingredients:
1lb dry red kidney beans (soak in 2 cups water overnight)
1 lb ham hocks (cook in 2 cups water)
1/2 tbs granulated chicken bouillon
1 med yellow onion, 1 green bell pepper, 3 ribs celery (Cajun trinity)
4-5 cloves fresh garlic
1 tsp cayenne pepper
1 tsp
1 tsp dried thyme
1 tsp garlic powder
2 tsp smoked paprika
1 tsp black pepper
1 tbs kosher salt
2 bay leaves
4 cups water
13 oz pkg andouille sausage
1/3 cup fresh parsley
*taste and adjust as needed
*simmer 2.5 hours
