English Drop Cookies (Coffee Cookies)

2 cups brown sugar
2/3 cup shortening
2 eggs
1 cup cold coffee
3 -4 cups flour (or more)
1 teaspoon baking powder
1 teaspoon baking soda
pinch of salt
1 cup raisins
1 cup walnut pieces

Preheat oven to 375°.

Cream together the brown sugar and shortening.

Add the eggs and coffee until well combined.

Stir together the baking powder, baking soda, salt, and flour. Slowly add to the creamed mixture.

Fold in the raisins and walnuts. 

Drop by spoonfuls  onto a parchment paper lined cookie sheet. Bake for 8 to 12 minutes, depending on the size of your cookies.

Yield: 21/2 dozen cookies (scooped with a 3 Tablespoon scoop)
