Today’s recipe is easy and simple tilachi vadi. This is a Makar Snkrant special recipe. Making tilachi vadi is tricky. The main problem is the stickiness of gudh. You should exactly know what should be the consistency of the syrup!! Today we are making til vadi without making syrup. Relieved, aren’t you? This vadi turns out nice, crispy and soft. This is 100% no fail recipe. I made this recipe after trying many other recipes, method and even gudh!!

Ingredients:
• 1 cup white Sesame seeds
• 1/2 cup roasted Peanut powder (Optional)
• 3/4 cup Gudh / Jaggery
• 1 tsp Ghee
• 1/2 tsp Water
• Cardamom powder
• Sliced Pistachios (Optional)

Method:
• Heat up a pan on medium heat and add sesame seeds.
• Roast the sesame seed well until they change the color and nice aroma is released from it.
• Turn off the gas and transfer few of the sesame seeds into a dish. You can use these for
garnishing.
• Add roasted peanut powder and mix well.
• Adding peanut powder is optional. You can skip it if you don’t want.
• In that case, you can replace the roasted peanut powder with sesame seeds if you want.
• Transfer the roasted mixture into a blender jar and pulse it 4-5 times to make coarse powder.
• Add gudh and blend it well together.
• You can add 2-3 tsp ghee while blending and roll ladoos from the mixture once blended well.
• Heat up ghee in a pan and add the blended mixture.
• Add water and mix well.
• Roast the mixture well for about 2-3 minutes until it comes together like dough.
• Turn off the gas and add the roasted sesame seeds. Mix well.
• Add cardamom powder and mix well.
• You can add nutmeg powder if you want.
• You can roll ladoos from the mixture when it cools down a little.
• Grease a dish with ghee and transfer the mixture into it.
• Spread it evenly and garnish with roasted sesame seeds and pistachios.
• Press it a little so that it won’t fall off.
• You can replace pistachios with grated dry coconut.
• Cut it into pieces when the mixture is still hot. Don’t wait till it cools down.
• Let the vadi set well for an hour.
• Take the pieces off and tilachi vadi is ready.
• You can store it in an airtight container for about 8-15 days.
