Welcome back to the Great Hall of Winterfell!

As promised, we've returned to craft the four House of the Dragon wines produced by Vintage Wine Estates and Seven Kingdoms Cellars into wine recipes from the two cookbooks produced in the A Song of Ice and Fire franchise! Both written by Chelsea Monroe-Cassel of The Inn at the Crossroads fame (she also wrote the Elder Scrolls Cookbook!), they were written roughly a decade apart and compliment each other nicely. The first one, "A Feast of Ice and Fire" includes book excerpts referencing each dish, while the second one, "The Official Game of Thrones Cookbook", is written as if Chelsea is adapting an in-universe collection of recipes written by Maester Alton for modern readers. Both very immersive in their own ways!

We left the previous video having assigned the closest book counterparts to the four House of the Dragon Wines and the best recipe from either cookbook for each; Arbor Gold for the California Chardonnay which will be used in our Myrish Firewine, Arbor Red for the California Cabernet Sauvignon which will be our Southron Mulled Wine, Dornish Red for the Oregon Pinot Noir which will become our Medieval Mulled Wine, and the private stock of Runceford Redwyne, Lord of the Arbor for the Lodi Red Blend, which will become our Hippocras.

There is one additional wine recipe from the two cookbooks, namely Honey-Sweetened Wine; it called for a semi-sweet white or rose, which doesn’t quite fit the bill of any of the House of the Dragon wines. As such, I have selected two wines for us to try this recipe two ways; a Chateau Ste. Michelle Riesling and a 2020 Maison No. 9 by Post Malone (while slightly drier, the rose still has some residual sugars and the large sword on the bottle is rather visually fitting - if you didn't know, Skyrim is Austin Post's favorite video game!).

Of course, shenanigans ensue as we make our Hippocras, Medieval and Southron Mulled Wines, Myrish Firewine, and Honey-Sweetened Wines! I'll get the pronunciation of "Galangal" and "Lys" next time, I promise.

We leave things off by teasing future House of the Dragon/Game of Thrones/ASOIAF beverage recipes, as there are many more in these cookbooks and a third cookbook is on the way in The Official Westeros Cookbook (hint: there's going to be recipes for Arbor Gold and Dornish Red wines!).
