르방과 풀리쉬 사용한 사워도우브래드도 있지만 막걸리 스트레이트법으로 만들어도 발효종 못잖게 맛과 향이 일품인 막걸리사워도우를 만들어볼게요.
정말 쉬우면서도 맛있답니다.

Ingredient
강력분 bread flour 500g
소금 salt 10g
몰트가루 malt 1g
인스턴트드라이이스트 instant dry yeast 1g
생막걸리 rice wine 410g

우녹스 오븐
240도 20분

I'm going to make bread with rice wine that can be as effective as fermented species.
Replace it with rice wine instead of water.
You don't have to put yeast in, but I put in a gram for a little faster fermentation.
Mix at low speed until dough is lumped together.
When the dough is lumped together, mix it at medium speed.
When the surface of the dough is smooth and stretched with fingers, it does not break.
Move to a fermenter and ferment until 1.5 times.
Punch the dough if it's 1.5 times swell
Punching increases the elongation of dough and plays an important role in making pores.
Put water on the floor and spread the dough out.
Stretch the dough and fold it in all directions.
Put it back in the fermenter and ferment it for 40 minutes (until 1.7 times).
Spread dough well and fold in half.
Cut the dough in half and make the dough flat.
Move to canvas and ferment again for 40 minutes at room temperature.
Before putting the dough in, give it a minute of steam, and after putting the dough in, give it a minute of steam.
Bake 464f 20minutes.
