Healthy Kothambari Vade (Coriander leaves steamed cake)

Take 2 bunch of finely chopped coriander leaves in a mixing bowl,
Add 2 cups of gram flour
Finely chopped 3- 4 green chillies

Add the following ground spices:
¼ teaspoon turmeric powder
1 teaspoon red kashmiri chilli powder
½ teaspoon cumin powder
½ teaspoon garam masala powder
a pinch of asafoetida (hing)
and 3 - 2 tablespoons of white sesame seeds
Now add ½ teaspoon sugar (optional) and pink salt as required.
Add garlic & ginger paste if you wish to.

Then mix everything very well to a thick dough with hand, add water as required 3 - 4 spoons only.

Grease a pan with oil & spread out the dough evenly for steaming, then Cover with a lid and steam on a low to medium heat for 10 to 15 minutes or until the dough firms up and cooks very well, to remove the steamed cake.

Grease a pan very well with a butter knife loosen the edges and invert the pan on a plate or wooden board
Tap the pan and unmold the cake.
Now cut in square or diamond shaped slices as you like

You could have it as steamed with a tempering of mustard seeds & white sesame seeds or

Heat 3 tablespoons oil in a tawa or pan. Place the steamed kothambari vade and pan fry on medium flame.
When the base is golden, flip and fry the other side. Flip a couple of times more and fry till the sides are crisp and golden.

(You can even deep fry them if you wish)Place the pan-fried Kothambari vade on kitchen paper towels for extra oil to be absorbed.
Fry the remaining kothambari vade in the same way.

Enjoy your hot Kothambari Vade with any chutney or sauce of your choice or with evening coffee or tea
