We're cooking up some classic southern favorites for y'all in today's video!
Hey family!! 👋😁👋 We're starting out today with Fried Bologna Sandwiches for lunch! Fried Bologna is a southern staple. Sometimes we have it for breakfast with eggs and grits, or on a biscuit! Of course, the fried, or not fried, bologna sandwich makes a quick lunch and sometimes supper when you need something quick. For supper in this video we make some fried potato cakes with leftover mashed potatoes! These are so good y'all! I could just eat potato cakes with some beans and onions and be happy as could be. 😄 Titus and Jonah go fishing, but they weren't biting so we fried up some catfish that he bought for backup. Grits go really good with fried catfish, so I cooked some up and added sharp cheddar cheese. Grits is another southern staple that can be for breakfast, lunch, or supper! Hey, you could even add sugar to 'em and call it dessert! 😂

Yeast Rolls:
I'm just going to post my regular yeast roll recipe here for y'all because it's easier, and a little quicker, and the ones I made in this video tasted identical to them. 😄👍💕
INGREDIENTS
1 cup Water, warm
3 and 1/4 cups White Flour
1/4 cup Sugar
1 tablespoon Active Dry Yeast or yeast packet
1 Egg
2 tablespoons Butter
1 teaspoon Salt

INSTRUCTIONS
Combine all ingredients (except for 1/4 cup of flour) in the bowl of a stand mixer and mix using a dough hook on low until combined.
(NOTE: I like to mix the yeast and warm water first while I'm getting everything else ready. For some reason the rolls seem to do better when I do that.)
Continue mixing about 5 minutes, gradually adding in the last cup of flour. Dough will be soft and just slightly sticky.
Turn out dough onto floured surface and knead two or three times, patting into ball shape.
Cover with kitchen towel and let rise 60-90 minutes, until doubled.
Turn onto floured surface and divide into 16 pieces. Shape into balls.
Place in greased 9x13 pan and cover with towel, allow to rise 45 minutes, until puffed.
Bake at 350 degrees for 15-20 minutes, until tops are golden brown.

For the catfish we just used the Red Lobster breading mix.😁👍

Fried Potato Cakes
Ingredients:
2-3 cups leftover mashed potatoes
onion, diced
1 egg
1 cup flour
salt and pepper to taste
oil for frying

Directions:
Heat oil in skillet a little over medium heat.
Combine all ingredients in a bowl and mix well. For potato patties, or "cakes", and place in heated oil. cook for 2-3 minutes per side until both sides are browned and the potatoes are heated through.
