Kachourie is a popular street food in Trinidad and Tobago. It is channa or chick pea based and very similar to the Middle Eastern Falafel. This is a great vegetarian appetizer to prepare this Divali. Here's what you'll need:

A heavy duty blender or food processor
1 cup of dry channa/chick peas, soaked in water overnight
1 cup of dhal/split peas, soaked in water overnight
salt
3/4 cup of flour (or 1/2 cup of cornstarch)
2 tsps baking powder
1 tsp ground coriander
2 heads of garlic
10-15 leaves of bandhania/shadon beni/culantro
1 hot pepper
bunch of cilantro
oil to fry

Serve with Tamarind Chutney    • Sweet and Savory Tamarind (Tambran) C...   or Tzatziki sauce.
