Ingredients:
For Chicken Marination:
Boneless chicken - 150 g (bite-sized pieces)
Ginger-garlic paste - 1 tsp
Black pepper - ¼ tsp
Salt - a pinch
Lemon juice - ½ lemon
Soy sauce - 1 tsp

For Corn Flour Slurry (for sauce adjustment):
Corn flour - 1 tbsp
Water - 2 tbsp

For Searing Chicken:
Oil - 1 tbsp

For Boiling Pasta:
Penne pasta - 2 cups (200 g)
Water - 7 to 8 cups
Salt - 2 tsp
Oil - 1 tsp (to toss after draining)

For Stir-Fry Base:
Butter - 1 tbsp
Oil - 1 tbsp
Garlic - 4 cloves (finely chopped)
Ginger - 1 tbsp (finely chopped)

For Vegetables:
Onion - 1 small (thinly sliced)
Carrot - 1 small (julienned)
Cabbage - ½ cup (shredded)
Capsicum (bell pepper) - 1 (sliced into strips)

For the Sauce:
Homemade Schezwan sauce -3 tbsp
Soy sauce - 1 tbsp
Vinegar - 1 tbsp
Tomato ketchup - 1 tbsp
Red chilli flakes - ½ tsp
Black pepper - to taste
Salt -to taste
Ajinomoto (MSG) - a pinch (optional)
Sugar - 1 to 2 pinches (to balance the spice)

For Final Cheese Mix & Garnish:
Processed cheese - 2 cubes (grated)
Mozzarella cheese - ½ cup (grated)
Coriander leaves - finely chopped (for garnish)
