Sarciado Fried Tilapia Recipe:

Ingredients:
1 whole Tilapia fish (cleaned and scaled)
¼ cup vinegar
1 teaspoon ground black pepper
1 teaspoon salt
2 eggs
3 tablespoons cooking oil (for frying the fish)
2 tablespoons cooking oil (for the sauce)
4 cloves garlic (chopped)
1 medium onion (chopped)
3 medium tomatoes (chopped)
1 tablespoon fish sauce
1 teaspoon seasoning (optional)
2 cups water

Instructions:

1. Marinate the Tilapia:
In a container, combine the vinegar, ground black pepper, and salt.
Coat the Tilapia fish with the mixture, making sure to apply it evenly on both sides.
Let the fish marinate for at least 30 minutes to allow the flavors to penetrate the fish.

2. Fry the Tilapia:
Heat 3 tablespoons of cooking oil in a frying pan over medium heat.
Once the oil is hot, carefully place the marinated Tilapia in the pan.
Fry the fish until it’s golden brown on one side, then flip it over and do the same on the other side.
Once the fish is fully cooked and golden on both sides, remove it from the pan and set it aside on a plate.

3. Prepare the Sauce:
In a separate clean frying pan, heat 2 tablespoons of cooking oil over medium heat.
Add the chopped garlic and onions, and sauté until the onions become translucent and the garlic is fragrant.
Add the chopped tomatoes and stir everything together. Cook for about 3 minutes, until the tomatoes start to break down and soften.
Pour in 2 cups of water and stir to combine. Let the mixture simmer for 5-7 minutes, allowing the flavors to meld together and the sauce to slightly thicken.

4. Add the Eggs and Fish:
Crack the 2 eggs directly into the pan with the sauce. Stir gently to incorporate the eggs into the sauce, creating a slightly creamy texture.
Gently slide the fried Tilapia back into the pan, making sure it’s well-coated with the sauce.
Stir everything together gently, cooking for an additional 3 minutes to allow the fish to absorb the flavors of the sauce.

5. Serve:
Once everything is well combined and heated through, remove the pan from the heat.
Serve the Sarciado hot with steamed rice on the side.
