I had the most delicious dan bing (蛋餅) in Hualien last week, and what better way to keep busy than to try it out? I looked up a few recipes online, but tweaked around for my own version. I'm very surprised at how well it turned out, and I'll definitely be making my own dan bings a lot more often now.

ingredients:
1 spring onion
2 eggs
160g flour
32g (around 4 large tbs) tapioca starch (or corn starch)
250 ml water
pinch of salt
vegetable oil (for frying)

directions:
1. chop one spring onion
2. beat two eggs
3. in a separate bowl, mix 120g of flour and 32g of tapioca starch
(you can substitute tapioca starch with corn starch)
4. slowly pour in 250 ml of water and mix (add more water until the batter is a runny consistency)
5. stir until there are no lumps
6. add in green onions mix again!
7. heat oil on pan over medium-low heat
8. add thin layer of batter to the pan and spread the batter evenly around the pan
9. flip pancake
10. pour egg mixture onto the pancake
11. carefully roll up the pancake
12. cook for another few minutes
13. serve with soy sauce, chili, or any other toppings
